My friend Gabi learned this sauce from her in-laws in Sardinia. It’s really quick and easy and perfect for pizza.
As some of you know, I’m not good at specifying amounts of ingredients, but it really doesn’t matter with this sauce. Just add to taste!
1 carton of passata (puréed tomatoes, sieved tomatoes, whatever you want to call it, but not canned tomato sauce as sold in North America. There should be nothing but tomatoes in there!)
a couple cloves of garlic, chopped
oregano, fresh if you have it
Use an immersion blender to blend all the ingredients together. You may not need to add sugar if the tomatoes are already sweet (e.g. if using San Marzano tomatoes).
