I finally managed to make a meal where all the produce came from my CSA! Ok, so maybe I cheated a little and added a couple leaves of lettuce, but only because I had already eaten most of my CSA lettuce the day before. I usually get such a mish-mash and/or such odd quantities that I have a hard time combining the ingredients and have to supplement them with veg from the store. Not this time.

I made teriyaki fish, salad with avocado and grapefruit, and these quick pickled carrots, which I highly recommend.
What a gorgeous looking meal! Thanks for posting…..

Did you know that I have an entire book of quick pickle recipes?

I did not! I always feel weird about making pickles with veggies that aren’t from your own garden, but since I don’t have a garden, I never make pickles. I think I’ll have to get over that.

Considering all the “now what?”s you seem to be experiencing with the CSA box, pickling is a totally reasonable option.

Yep, I think local farm is close enough to own garden. I got 20 more carrots on Friday. That’s all that’s picklable at the moment though.
