All CSA, All the Time

I finally managed to make a meal where all the produce came from my CSA! Ok, so maybe I cheated a little and added a couple leaves of lettuce, but only because I had already eaten most of my CSA lettuce the day before. I usually get such a mish-mash and/or such odd quantities that I have a hard time combining the ingredients and have to supplement them with veg from the store. Not this time.

Rösti

Inspired by Jessica, and a lack of cash, I made a dinner from stuff I had in my kitchen. I was also starving, so instead of waiting 40 minutes for lentils and rice, I made this rösti; 5 minutes to prep and less than 10 to cook.

Grated potato, grated onion, held together with an egg, seasoned with salt and pepper, fried in oil and butter. Done like dinner.

February has always been my least favorite month, and this February was no exception. Clients are taking forever to pay, I had to turn down much-needed work because of computer problems, and now I’m trying to play catch-up while sick. Given that things are tight right now, I’m trying to limit my trips to the grocery store and cut out eating out for the next two weeks.
